Yields: 8 Servings

2 bunches, dino kale
1 teaspoon, salt
4 cloves, garlic
.25 cup olive oil
.25 cup pine nuts
.25 cup currants, roughly chopped
1 preserved lemon, supremed & diced
1 preserved lemon peel, minced
fresh lemon juice

1. Tear kale into bite size pieces, discarding stems.

2. Add salt & massage kale.

3. Add remaining ingredients and mix well.

4. Add lemon juice to taste.

The preserved lemon peel and the sweetness of the currants balance the strong taste of the Kale.
