Asian-Inspired “Zinc” Pesto (for those with Candidiasis)

Wanted to share a very successful experiment for Candidiasis. Lots of goodness, and very delicious (even with Stevia). It also still tastes good after being refrigerated after three weeks.

Ingredient (makes 3 cups)
8 cloves   garlic
3      Thai chiles
5 drops   Stevia
1 tsp      sea salt
2 Tsp      minced peeled ginger
2 cup      roasted pumpkin seeds
zest of 3 lemons
2 cup      extra-virgin olive oil
1-1/2 cup   basil leaves, packed
1-1/2 cup   mint leaves, packed
1 cup      cilantro, packed

Direction
1. In a food processor, combine the garlic, chiles, Stevia, salt, ginger, pumpkin seeds, zest and 1 cup of olive oil, and blend until smooth.
2. Add the basil, mint and cilantro, and blend while slowly adding the remaining of olive oil until a thick puree is formed.

I've tried a few different ways. One as a salad dressing by adding more olive oil and lemon juice to it. And two, I used it as a pasta sauce: heat it up in a vegetable stock and ground turkey with some other seasonings, and pour on brown rice pasta. And three: I stir-fried right with the pasta (sometimes with quinoa, sometimes brown rice), eggs and vegetable--Asian style, my favorite. So, a batch doesn't last long for me at all ;)

Hi Komoot,

Can you clarify how it helps for candida? Is it solely because of the amount of garlic in the recipe or combination of other ingredients too? Thanks.

I mean it's SUITABLE for people with Candida because the sweetener used is Stevia. (the only sweetener I know of that doesn't feed the fungus/yeast)

And yes, garlic is helpful in healing Candida when you have it raw.
