Fish Soup With Arame and Vegetables

Fish Soup With Arame and Vegetables
Soup Recipe By: Jennifer Burns
Dashi by Sarah Bearden
Serves:  6

2 5 kombu
8 cups water
2 cups bonito flakes

3 large carrots, julienne
3 large zucchini, julienne
1 1/2 cup snow peas
1/2  cup arame , soaked
1 lb salmon, cubed
6 scallions, sliced
2 tbsp miso
2 drops toasted sesame oil

1 cup cilantro
1 cup peas sprouts

For Dashi:
1. Place kombu in a pan, add water, let soak
    for at least 30 minutes.
2. Bring water to a boil, watch carefully and
    remove kombu just before water   
3. Add bonito flakes, then turn off heat.
    When all bonito flakes have sunk to the
    bottom of the pan, strain stock through a
    fine sieve.

For Soup:
1. Heat dashi in a medium soup pot over
    medium-high heat. Do not boil.
2. Reduce heat to medium, add carrot,
    zucchini, and arame. Cook for 5 minutes.
    Add scallions and salmon, cook until
    salmon is cooked through, approx 10
3. In a bowl mix 1/2 cup soup stock and 
    miso. Add mixture to soup, gently
    stirring. Add sesame oil.
4. Ladle into bowls, top with cilantro and
    pea sprouts.
