Quinoa with an Asian Twist
« on: April 09, 2010, 10:24:28 PM »
After tasting my coworker's amazing experimentation with quinoa today I decided it was just too good to keep to myself. Packed with flavors and it's beautiful to look at!

Start with:
4 cups of cooked quinoa (1 cup uncooked will yield about 4 cups cooked)
1.5 cups cooked green peas
2 med red, yellow, and or orange bell pepper, small diced
2 tomatoes, med diced
1 green onion, thinly sliced

-Toss ingredients together in a medium bowl.

Then drizzle the following into the bowl:
3 Tablespoons soy sauce, start with 1 T. and add a little more according to your taste
2 drops of sesame oil
2 minced garlic
1-2 Tablespoons black sesame seeds (or white, but black looks prettier!)

-Toss ingredients again. At this point, taste and feel free to add more seasoning.

I hope you'll enjoy this as much as I did.
