Apple Raisin Oatmeal

Apple Raisin Oatmeal  --  Servings: 2
1 cup oats
1 1/2 cups water
1/2 cup almond milk/soy milk
1 peeled/diced Granny Smith Apple
1/8 cup raisins
1/8 cup walnut pieces
1 Tbsp coconut oil
1 tsp xylitol
1/4 tsp cinnamon
1/4 tsp nutmeg

     1.  Set pan to medium heat to melt coconut oil and add the cut apples
     2.  Set a pot to med-high heat and add the water, oats, and almond milk and bring
          to a boil.
     3.  Just before the apples are cooked to desired texture add the cinnamon, nutmeg,     
          raisins and xylitol stirring it all together.
     4.  When the oats have cooked through, serve in a bowl and top with apple mixture.
          Add more milk if desired

I loved the recipe. I went shopping today and instead of soy milk purchased Almond milk as a replacement for my my refrigerator. Seeing the replacement in your recipe was great. Not feeling so comfortable about all the soy products. Thanks for the options and nice recipe :).
