Carrot Hash Browns

Try these!

2 Tablespoons butter
1 Teaspoon safflower oil
3 medium carrots, peeled and finely grated
3 medium potatoes, peeled and finely grated
1/2 small white onion, finely grated
1/2 teasoon sea salt (optional)

In a large skillet, melt butter and oil.  Add carrots, potatoes, and onions.
Add seasoning.  Saute until browned on one side. Flip over and saute on second side until browned.  Break apart into small chunks, or serve in wedges cut from the round.

Note: The "flip over" part of the recipe never quite works out that way, neither do the wedges.  But it still comes out quite tasty!

You can also try zucchini or yellow squash instead of the carrots.  This makes another tasty hashbrown!
