Veggie Collard Wraps

Veggie Collard Wraps
Adapted from tastyandmeatless.com, Raw Nut Pate
Servings: 4

This simple veggie wrap can be made in less than 20 minutes.  It is a delicious alternative to flour based wraps.

Ingredients
1 cups raw sunflower seeds, soaked in water overnight
cup sun dried tomatoes, soaked in water overnight
cup lemon juice
2 tablespoons tamari
2 tablespoons chopped cilantro
1 teaspoon cumin
1 teaspoon organic kelp granules
4-6 collard green, freshly washed and dried
cup chopped green onion
2 carrots, julienned
1-2 red peppers, julienned
1 large cucumber, chopped
Directions

1.Combine the first seven ingredients in a food processor.  Process until smooth.
2.Spread nut mixture on top of collard greens and top with fresh veggies.
3.Roll up collard green and secure with a toothpick.
4.Serve with a side of guacamole.

Hi Rebecca

Thanks for posting. By chance, have you been to the Ferry Building Farmer's market? I went last week and had a "raw burrito" from the Alive stand. Alive is a raw restaurant in San Francisco on Lombard Street I have always wanted to try. Anyways, the raw burrito was very similar to your wrap. It used two large pieces of romaine lettuce, with some sort of sunflower spread and a ton of tasty veggies with a curry cashew sauce. The best part was it also had a ton of fresh sprouted beans which were a nice crunchy addition. Anyways, next time you are in SF on a Saturday morning, I would highly recommend you check it out. Thanks again for sharing your recipe!
