raw-some green soup

Raw-some soup               by: Lauren Sherman
Serves 2-3

1 yellow onion, chopped
3 cloves garlic
1 tbsp cooking oil (grapeseed is my preference)
1 inch ginger, sliced
1 cup filtered water (or more, depending on the consistency you prefer)
1 cup kale
cup herbs (cilantro and parsley work great)
1 tbsp mellow miso

1.   Using medium heat, heat oil in a pan and cook onion until it becomes slightly transparent.  Add garlic and ginger and cook for another minute.
2.   Add all of the ingredients to a Vitamix and blend until smooth.
3.   For a creamier consistency, you may add a half an avocado at the end, or some soaked cashew nuts.
