Vegetarian recipes for Buddhist Center

Hi all you Bauman Chefs!

I'm currently an NC student and am looking to help out the chefs who feed a group of 40 resident Buddhist practitioners lunch and dinner 6 days a week. The menu needs to be vegetarian and accomodate those who are gluten- and dairy-free. Though they use mostly high-quality, organic fruits and veggies, and whole grains, I have found their high starch menus lacking in protein and nutrient density.

I have some ideas but don't have a large repetoire of menu plans or recipes to offer them, especially given the large number of people they have to feed.

Any suggestions would be greatly appreciated!
