Bauman College and Phat Beets Produce brought in BC graduate Cary Kaufman to demonstrate how to prepare “Tomato and Plum Salad,” sharing free samples and recipes, along with nutrition tips at the market located in North Oakland at Arlington Medical Center. With food justice at its core, the market provides affordable organic produce and thrives on community support. This event is a program of Bauman College Outreach’s Nutrition Skills Initiative.

Beet and Tomato Salad

Serves 4


3 medium Plums, pitted, and small dice
¼ cup of balsamic vinegar
3 tomatoes medium dice
2 tbsp olive oil
3 tbsp fresh basil, chiffonade
Salt and pepper to taste

1.  In a medium mixing bowl, let plums sit in balsamic vinegar for 5 minutes.
2.  Add tomatoes and olive oil.  Mix thoroughly.
3.  Add basil, salt and pepper.
4.  Serve as a salad, on top of a green salad, or on crackers.
