Title: Herb Tomato Salad

Thought I'd share my version of this recipe that I just used for my snack demo in the NE class.  Seemed to go over well so here it is for the rest of the Bauman Community:

Herb Tomato Salad:


2-3 medium size tomatoes (Sliced)

1 clove garlic    (minced or crushed)
3-4 tbsp extra virgin olive oil
2 tbsp white balsamic vinegar

herbs  - recommend organically grown and fresh
2 tbsp cilantro     (finely chopped)
2 tbps chives      (finely chopped)
4 tbsp basil         (finely chopped)
1 tbsp spearmint  (finely chopped)
1 tbsp oregano    (finely chopped)

optional:  Sea Salt and crushed black pepper to taste

-   mix garlic, olive oil and balsamic vinegar in a medium size bowl
-   chop and add the herbs to the mixture
-   slice and arrange  tomatoes on a plate
-   evenly spread the herb mixture over the tomatoes
-   serve immediately

Tomato Ricotta Salad

3 Plum tomatoes
2 oz Ricotta cheese
0,5 oz Arugula
0,5 oz Basil
1 tbsp Extra Virgin Olive Oil
1 tbsp Balsamic glaze
1 pinch Sea salt
1 pinch Black Pepper
