oatmeal quick bread

here's a good recipe for an easy healthy quick bread....

1 cup rolled oats
1 cup whole wheat flour (or sub gluten-free flour mixture)
2 tsp baking powder
1/2 tsp salt
1 1/2 tbsp honey
1 tbsp sunflower oil
1 cup milk (cow, almond, rice, or soy)
optional: 1 cup nuts, seeds, or dried fruit (sunflower seeds, walnuts, raisins....whatever you like)

Preheat oven to 450 degrees.  Grind oats in a food processor.  In a large bowl, combine ground oats, flour, baking powder, and salt. 

In a separate bowl, dissolve honey in the oil then stir in milk.  Combine both mixtures, adding in the nuts or seeds or dried fruit if you like, until a soft dough is formed.

Form the dough into a ball and place on a lightly oiled baking sheet.  Bake for 20 minutes, or until bottom of loaf sounds hollow when tapped.
