Forbidden Rice Salad

I made this the other day, it's a family favorite.

1 C. black rice (also called Forbidden Rice)
1 3/4 C. water

soak the rice at least 1 hour
bring to a boil
then cook for 35 minutes on low until water is absorbed and rice is tender
leave in pot to cool

dice:
1 English cucumber
2 medium tomatoes
1 large red pepper
mix together with 1 T. olive oil, a sprinkle of sea salt (or Herbamare) and pepper
let sit

When rice is cooled to room temperature
put in the center of a large bowl
drain veggies and mound around the rice
serve room temp
