Vegan Alfredo?
« on: May 27, 2009, 01:21:02 AM »

One of my very favorite foods before I became vegan was shrimp or chicken alfredo.  Now, I've tried a few recipes using nutritional yeast or ground nuts, but they never seem to have the right consistency.  I know it won't taste exactly like it and that's okay with me.  I've become quite accustomed to new flavors and textures over the years, but does anyone know of a recipe that's remotely similar?   :-\

I like to make this version of alfredo sauce. Hope you like it too.

Dairy Free Alfredo Sauce
Serves: 4

   3 tablespoons olive oil
   4 cloves garlic, minced
   1 tablespoons flour of choice
   1 cups milk of choice
   1 teaspoon oregano
   1 teaspoon sea salt
     teaspoon fresh ground pepper
   Pinch of nutmeg
    cup nutritional yeast

In a large skillet, heat olive oil over medium heat. Add minced garlic and lightly ssaute just until fragrant.
Stir in flour and continue to stir and cook for one minute. This will be thick.
Slowly pour in the milk, continually stirring to ensure there are no lumps.
Add oregano, salt, pepper and nutmeg. Stir until the sauce is creamy and thick enough to coat the back of a wooden spoon.
Turn off the heat and add the nutritional yeast.
Serve over pasta of choice.
