Chocolate Date Cake with Almond Butter Frosting and Fresh Fruit

INGREDIENTS

Chocolate Date Cake
- 2 cups pitted Medjool dates
- 2 cups water
- ½ cup raw cacao powder*
- 2 tsp baking powder
- 4 eggs
- ½ tsp salt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp cardamom
- Zest of 1 orange
Almond Butter Frosting
- ½ cup creamy almond butter^
- ¼–½ cup maple syrup (to taste)
- ¼ cup raw cacao powder*
- 1 tsp vanilla extract
- ¼ tsp salt
- Water or plant-based milk as needed
Optional Garnishes
- Fresh raspberries
- Orange slices
- Mint leaves
- Coconut flakes
- Pomegranate arils
INSTRUCTIONS
Chocolate Date Cake
- Rehydrate the dates in hot water for about 10 minutes, drain and reserve liquid.
- Preheat oven to 350°F and grease a 6-inch cake pan.
- Blend all cake ingredients in a high-powered blender or food processor until smooth. Add reserved date soaking liquid, as needed, to reach a smooth and thick batter.
- Pour batter into the pan and bake for 30–40 minutes, until set and a toothpick comes out mostly clean.
- Cool completely and remove from pan before frosting.
Almond Butter Frosting
Whisk all ingredients until smooth and glossy. Adjust consistency with water or plant-based milk. Spread generously over the cooled cake. Reserve any extra in the refrigerator for 1 week.
Notes
*Cocoa powder can be used in place of raw cacao
^Cashew or sunflower butter can be used in place of almond butter
