Much to the surprise of most, the avocado is classified as a fruit rather than a vegetable because it contains a pit. Nearly 500 varieties of avocados exist. Avocados are a great source of fiber, potassium, and vitamins C, K, folate, and B6.

6 medium carrots
13 stalks celery
2 small beets (or 1 large)
4 leaves kale
12 sprigs parsley
1 medium lemon, ends trimmed
5 inches ginger root
1 medium avocado
1 Tbs protein powder, optional
1. Scrub all ingredients and cut into large chunks. Process carrots, celery, beets, kale (stems included), parsley, lemon (with rind), and ginger in a juicer.
2. Add juice to blender along with avocado and protein powder, if using, and blend until smooth and creamy.
3. Chill or serve immediately.
Yield: about 3 cups
