Barley "Oatmeal" with Pistachio Milk

Greetings everybody :)
   I'm sure many of you have heard about using Barley as a breakfast alternative to Oatmeal. While I know Oatmeal is a great way to start out the day, I've never been a fan of it so thought I'd finally try using barley instead. I concocted this recipe a few weeks ago and found it to be quite delicious. 
    First I made the Pistachio milk.  (While most people make or purchase Almond milk, I encourage you to try this because I find it be quite divine!) Recipe is as follows;
     -1 cup raw pistachios (soak for 2 hours)
     -3 cups water
     -2 dates
     -1 tsp vanilla extract and a pinch of sea salt
  Blend in blender or Vitamix and strain

   For the barley "oatmeal" I cooked the barley the night before and stored it in my fridge for easy prep that morning. I combined the following;
    - 1/4- 1/2 cup cooked barley (which I warmed up in a pan with some coconut oil)
    - berries, dried fruit (I used raspberries and a few almonds)
    - sprinkle of cinnamon and nutmeg and raw cocoa nibs
    - 1 tbsp of ground flax seeds
    - small spoonful of raw honey
I encourage you to try adding in other ingredients that inspire you.  Some things that come to mind are spirulina, goji berries, chia seeds, banana, or dried cranberries.
