Buckwheat Vegan Raw Pizza

This recipe was inspired by Thrive  Magazine and adapted slightly. Pizza can be suitable for gluten intolerance, vegans, vegetarians and nightshade intolerance.

Simple recipe with moderate prep time (about 1 hour), 30 mins backing and 5 mins to put the rest together. Beautiful colors, seasonal vegetables, raw, nutrient dense and delicious.

Buckwheat Crust
cup ground buckwheat grouts (flour) + 2 tbsp.
1 cup cooked buckwheat (1 cup buckwheat to 3 cups water. You want it nice and mushy)
2 tbsp. finely chopped fresh rosemary
2 tsp. garlic powder
2 Flax Eggs (2 tbsp. ground flaxseed with 6 tbsp. water. Stir and let sit for 15 min)

Beetroot Humus Pizza Sauce
1 -15 ounce can of garbanzo beans
3 tablespoons extra-virgin olive oil
3 tablespoons tahini
1 meduim beet scrubbed and cut into cubes
1 tablespoons lemon juice (from 1/2 lemon),

1. BEETROOT HUMAS PIZZA SAUCE- Wrap beets in tinfoil and place in oven on 450 degrees for 1 hour or until very tender. Let cool and remove skin. Drain and rinse garbanzo beans. Add all ingredients into a blender and process until smooth and creamy.  Place in refrigerator while preparing step 2.
2. CRUST- Combine all ingredients in a bowl and mix with hands until the dough becomes sticky and easy to work with. Form it into a ball and transfer to parchment paper lined baking sheet with tbsp. olive oil.  Sprinkle 2 tbsp. of buckwheat flour on parchment paper and roll dough out into what shape you like. Bake at 350 degrees for 30mins. Remove and let cool for 5-10 minutes.
3. TOPPINGS: Spread a nice layer of beetroot humus on crust. Add toppings of your liking and enjoy with friends and family.
