Simple Hearty Sweet Potato Lentil Stew

I'm currently obsessed with this dish! It's so simple and makes for such a delicious hearty dinner. Also a guaranteed hit for potlucks (even for the non-plant based eater types out there)!
Ingredients:
2 tablespoons coconut oil
1 cup diced yellow / sweet onion (a little more is ok!)
1 cup dried red lentils
3-4 medium sweet potato, cut into 1-inch cubes
1/2 teaspoon ground turmeric
1 tablespoon curry powder
1 teaspoon ginger powder
1/2 teaspoon sea salt
Freshly ground black pepper
4 cups vegetable broth
1 can coconut milk
Directions:
1. Heat the oil in a large pot over medium heat. Saute the onion until it’s turning a little golden. Add the lentils, potato and seasonings, and stir to combine everything.
2. Add the broth and bring to a boil. Reduce the heat to a simmer and cook for 25-30 minutes, or until the lentils and sweet potato are tender. Stir in the coconut milk. Season with salt and pepper, to taste, and serve warm. (I like to serve this dish with cooked quinoa or brown / wild rice).
