Coconut Milk is my favorite non-dairy alternatives. However, I have noticed that the pre packaged coconut milk you can buy in the supermarket contains more than just coconut. Packaged coconut milk can contain unnecessary additives such as:
-Carrageenan
-Gellan Gum
-Added Sugar
-Natural Flavors
-Synthetic Vitamin D2
-Corn Dextrin
-Xanthan Gum
None of these ingredients belong in coconut milk and do not add to the nutritional value. I make my own coconut milk at home using Nature Value Organic Coconut Milk (organic, no sugar added, no preservatives) - you can buy it on Amazon here:

I use 4 cups of water and 1 can of Nature Valley Organic Coconut Milk, blend & serve.
