African Peanut Butter Quinoa Soup

African Peanut Butter Quinoa Soup!

*This is a great recipe for winter, and is very filling and nutritous!* Try it out!

Chop one medium onion.
Mince to garlic gloves.
Mince 1 small jalapeno.
Dice one  red bell pepper.
Dice 2 celery stalks with leaves.
Dice 2 medium zucchinis.
Dice 1 medium sweet potato.
Dice butternut squash.

Rinse and drain quinoa.

In a pot, melt the coconut oil on medium high, and add all vegetables.
Add ground cumin.
Add dried oregano.

Sautee for 10-15 minutes, or until vegetables are soft.

Add vegetable broth, quinoa, and black pepper and cayanne pepper to taste (optional)

Bring to a boil. Then once it reaches a boil, turn down heat to a simmer, and cover.

Simmer until Quinoa is cooked and vegetables are tender (10-15 minutes).

Add peanut butter. Use wooden spoon to help completely blend.

Simmer another 15 minutes, and serve.

This recipe sounds great.  can you tell me how much peanut butter and broth to add?

Hi Naomi!

Im soo sorry that i took this long to get back to you!

It is half a cup of peanut butter i believe, that you put in towards then end, and stir with a wodden spoon until it is disolved.
And 6 cups of vege broth, or whatever you like  :)

Hope you're able to make it!
I just cooked it for everyone for my cheffing final, and they loved it too!

This recipe sounds super delicious! I was honestly just wondering about how quinoa would work in a soup since I have never tried it. This sounds perfect! Thanks for sharing!!! :)
