Turkey Day dish...

Every Thanksgiving each member of my family is in charge of choosing and preparing a dish for the big day.  Considering i am now studying nutrition, i am feeling a little pressure!  Any ideas?  I was thinking of a carrot dish....

I have a few ideas for your big turkey day. One is a carrot dish that I found the recipe for on the back of my yogurt container. The other is for sweet potatoes, nice and easy.

1. Wash and Wrap sweet potatoes or yams in aluminum foil and bake on 400 degrees
for 45 to 60 minutes or until soft to the touch. These are easy to find, easy to prepare and leave no clean up.

2. Organic Harvest Carrot Soup
2 tablespoons olive oil
1 tablespoon ginger, peeled and chopped
3/4 cup organic onion, diced
2 organic garlic cloves, chopped
3 cups organic carrots, peeled and chopped
4 cups vegetable stock
2 tablespoons rice
1 cup Stoneyfiled Farm Plain Yogurt
2/3 tablespoon cornstarch
Salt and pepper to taste

Heat olive oil over medium-high heat. Add ginger, onion and garlic. Saute' until onions are soft and translucent. Add carrots, vegetable stock and rice. Simmer for 30 minutes or until carrots break apart easily. Using a blender or food processor, puree the soup until smooth. Return to pot a medium heat. In small bowl, combine yogurt and cornstarch and blend well. Stir mixture into soup. Do not boil. Season with salt and pepper. Garnish with a dollop of plain yogurt. Yields 8 servings.

My favorite is braised root vegetables.

Melt 2 T. butter in a large saucepan
sautee a large diced onion and 2 minced cloves of garlic

when onions are wilted add 1 C. vegetable broth and the following root vegetables julienned

4 carrots
2 parsnips
2 turnips

turn heat down to simmer and cover
check occasionally and add water if needed

when vegetables are cooked toss with 1 T. sucanat

Sprinkle with parsley and serve.
