Zucchini Brownies

Ok, so even though these have vegetables in them, they're still a brownie.  But, if you're looking for a great vegan brownie recipe and you happen to have zucchini on hand....look no further!

Zucchini Brownies

1/2 cup canola oil
1 to 1 1/2 cups natural cane sugar
2 teaspoons vanilla
2 cups unbleached all purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 cups grated zucchini
optional - 1/2 cup chopped nuts of choice (walnuts or pecans are great!)

Preheat oven to 350 degrees F.   Lightly oil a 9x13 inch baking pan.

In a medium bowl, whisk flour, cocoa, baking soda, and salt until combined and no lumps remain.
In a large bowl, mix oil, sugar, and vanilla until blended well.
Add the dry mixture to the wet and combine.  Add the zucchini and nuts (if using).  At this point the mixture will be very thick, and it's easiest to mix and squish together with your hands. 
Press into your prepared baking pan.

Bake for 25 to 30 minutes, or until the brownies start to spring back when touched.
Cool and cut into squares....enjoy!
