JENN'S POWER TRUFFLES recipe adapted from Bauman Nutrition
1 C. nuts - walnuts, cashew, pecans, almonds (soaked overnight)
1/2 C. dates - pitted
1/4 C. dried cherries, cranberries or raisins or combination
1/4 C. figs - stems removed
2 T. flax seeds - ground
2 T. unsweetened cocoa powder
1 scoop of Vital Scoop, whey or other protein powder
1 T. maca powder
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 C. dry shredded coconut
2 T. agave nectar
enough water to process into a formable consistency - not too dry, not too sticky
Directions:
1. In food processor, pulse nuts until very fine. Remove and set aside.
2. Combine rest of ingredients (except water) in food processor. Begin to pulse until
starting to blend ingredients.
3. Begin to add water a tablespoon at a time until mixture starts to come together. When
it looks well blended, transfer to large mixing bowl.
4. Add ground nuts and stir all ingredients together with large wooden spoon. May need
a little more water or another tablespoon of agave (will make mixture sweeter) for
proper consistency.
5. When well blended, pull off small pieces and roll into balls. You can roll balls in more
shredded coconut, ground nuts, cocoa powder etc. for decoration.
6. Truffles can be stored in fridge for a week or in freezer for a month.
Great snack for brain energy, mood booster and/or aphrodisiac. ENJOY!
