Vegan Pumpkin Pancakes

Pumpkin Pancakes
Serves 4

1 1/2 cups unbleached all-purpose flour
2 T Turbinado sugar or natural sweetener
1 T baking powder
1/2 t. salt
1/4 t. pumpkin pie spice or allspice
1 1/4 c. dairy free milk
1/3 c. canned pumpkin
1 T. olive oil

1. In a large bowl, combine the flour, sugar, baking powder, salt and pumpkin pie spice and set aside.

2. In a food processor or blender, combine milk alternative, pumpkin puree, and olive oil and process until well blended.  Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined.

3. Heat a lightly oiled griddle or nonstick skillet over medium heat. Ladle about 1/4 cup of batter onto hot griddle.  Cook on one side until small bubbles appear on top. Flip pancakd onto other side and let cook until lightly browned.  Keep pancakes warm and covered while preparing the remaining pancakes.
