Live coconut cream pie

Live coconut cream pie   (my favorite food at Cafe Gratitude!!!)
Crust:
21/2 cups dry coconut flakes    1/4 cup well packed, chopped dates
1/4 teaspoon vanilla                1/8 teaspoon salt
Put coconut flakes, salt and vanilla in food processor (use S blade). Add small amounts of date until crust sticks together. Press into a greased (with coconut butter) 9 inch pan.

Filling:
11/4 cups coconut milk (use fresh coconut for both) 3/4 cup coconut meat
3/4 cup well packed, finely chopped dates      1/2 teaspoon vanilla
2 pinches salt                                            3 tablespoons lecithin
1/2 cup + 2 tablespoons raw scented coconut butter
Garnish  3/4 cup dry coconut flakes
Blend coconut milk, meat, date, vanilla, and salt until smooth. Add lecithin and coconut butter and blend until well incorporated. Pour into prepared crust. Set in fridge/freezer until set (about 1 hour). Top with a layer of coconut flakes.
It is absolutely delicious!!!!!!

I have been wanting to make this for a while. I am sure it is very delicious!! But how labor intensive is it? And where do I find coconut butter. Not with other nut butters, right?  ???

Ok so I have tried this recipe... and loved it!!! My omni housemates love it also. =) I did make a couple changes that I think improved it. To the crust I added a 1/4 cup more dates, and and also 2 Tbs coconut cream to hold it together better.

Hi Vanessa.

Thanks for posting this recipe.  I've just discovered the lusciousness of coconut butter and look forward to trying this recipe.  I've also been wanting to try some of the Cafe Gratitude recipes so this will get me started.
