Hi All

I would like to share this recipe it is one of my favorites.
Hope you like it.


Broil Salmon with Caper sauce


2 Pieces of salmon 31/2 oz. each
1 Pinch each, salt and black pepper

          For the sauce
2 Tsp.   Of capers, chopped
1 Med. Garlic clove, minced
1           Egg yolk
1 Tsp.   Dijon mustard
2 Tsp.   Lime juice
½ Tsp.  Agave nectar
3Tbs     Grape seed oil
¼ Cup Extra virgin olive oil
Pinch of sea salt


1. Put garlic on the cutting board with the pinch of salt and with the end of a heavy knife mash into a paste.
2. On a small bowl whisk together the egg yolk, mustard, garlic, lime juice and the agave nectar.
3. Combine the olive and grape seed oil and slowly incorporate with the other ingredients whisk until very smooth and creamy. Add the capers and salt and pepper; be careful because the capers are salty, cover and put it in the refrigerator until ready to use.
4. Salt and pepper the salmon and rub with olive oil, broil skin side up on high for 5 minutes, then turn and broil for 5 more minutes, when ready take out and let it cool for couple of minutes. Serve with the caper sauce and sautéed asparagus.
