Yummy Raw Kale Salad

I got this recipe from the owner of Leaf Organic restaurants in L.A. at a raw food demo.  He did not give the exact amounts for the ingredients, but I'll try to!  It's very nutritious and delicious!

YUMMY RAW KALE SALAD

Put all of these ingredients in a big bowl and mash/mix with your hands (I use food preparing disposable gloves):

-1 head organic kale, washed and leaves stripped off and ripped into small pieces
-Juice from 1 large lemon (the juice will also help to soften the leaves)
-1 avocado, mashed
-3 (or so) TBSP of raw organic tahini
-cayenne to taste

**Often, I double this recipe!

Sounds good and simple.  Here's another version from my website using lots of E4H ingredients!

Salad:
1 bunch dinosaur kale, de-stemmed and shredded
1 apple, grated
1 red beet, peeled and grated
4 radishes, diced
small carrot, cut on bias into 1-inch pieces, for garnish

Dressing:
1/3 cup flax oil
2 tsp Dijon mustard
1 TB agave nectar
1 TB miso
cup brown rice vinegar
2 Tbsp water

INSTRUCTIONS

1. Put kale in medium bowl and break up with fingers to tenderize. Add apple, beet and radish.
2. Whisk dressing ingredients together until creamy.  Pour over salad mix and toss until coated.
3. To serve, make a mound of salad on plate and top with carrots in a circle to form a flower.
