Yummy summer appetizer! Mediterranean Layered Dip

Mediterranean Layered Dip

You can layer this dip any way you like.

 7 oz container of Organic plain or spicy Hummus (or make your own)
1 c chopped baby spinach
½ c chopped tomatoes
¼ c chopped red onion
¼ c reduced-fat Feta cheese
2 Tbsp sliced kalamata or black olives
½ c shredded cucumber

Toasted Pita wedges or pita crisps for dipping


Spoon half of the hummus in the bottom of a serving bowl. Layer on spinach, tomatoes, onions, cheese, and olives.  Top with remaining hummus and layer the cucumber on top. Serve chilled with pita crackers.

Serves 8.  Serving size -1/2 cup
  • 73 calories, 3.7g fat, 2.3g protein, 8g carbs., 2g fiber, 137mg sodium
