Here's a recipe you might enjoy - very nutrient dense and delicious!

                      Sunflower Pate                Approximately 8 servings

   2 cups raw sunflower seeds, soaked 4 hours in filtered water
   1/2 cup water
   1/3 cup lemon juice
   1/2 cup tahini
   2 tablespoons mellow white miso
   1/2 teaspoon sea salt, or to taste
   2 teaspoons onion powder
   4 cloves crushed garlic
   1/8 teaspoon cayenne
   1/2 cup minced parsley
   1/4 cup minced green onion

Place the sunflower seeds, water, lemon juice, tahini, miso, sea salt, onion powder, garlic, and cayenne in a food processor and process until smooth. Add the parsley and green onion and pulse briefly to combine. Serving suggestions: serve on small romaine leaves, or with crackers or raw vegetables, or wrap in a nori sheet with sprouts and raw vegetable strips.
