2 Great Recipe Ideas: Quinoa Salad and Cabbage/Kale Salad

Asian Slaw
Thinly slice the vegetables and mix together.  Use the remaining ingredients for the dressing, mix and pour over the salad.  This recipe is high in fiber and micronutrients.

Cabbage      1 cup of both red and green      
Carrots      1 cup               
Red Bell Pepper   1 cup               
Kale         2 cups               
Rice Vinegar      1/3 cup            
Sesame Oil      1/3 cup            
Olive Oil      1/3 cup            
Shoyu         2 tblspn            
Miso         2 tblspn            
Mustard      1 tspn               
Ginger fresh      21/2 tspn            
Garlic fresh      3 cloves            
Agave syrup       tspn               
Cayenne Pepper    tspn               
Sesame Seeds      garnish

Quinoa Roasted Vegetable Salad
This is a great summer recipe, its easy, light and very versatile.  You can use any vegetable you like, making it a great way to utilize the abundance of vegetables and herbs you have growing in the garden, or any in the refrigerator that need to be used.   

1 cup Quinoa
1 Red Onion
2 Large Carrots
1 Zucchini
1 Red Bell Pepper
2 Tomatoes
3 Cloves Garlic

Preheat oven to 400 degrees.  Cut up all veggies, except garlic into small chunks.  Place onto a baking sheet, press garlic over the top.  Sprinkle with a teaspoon each of salt, pepper, Hungarian paprika, Italian herbs, and cumin.  Pour olive oil or coconut oil over the top and use a spatula to mix everything together.  Bake for 20 minutes.
Cook 1 cup quinoa with 1.5 cups water.  Bring to a boil, then lower to low heat and cover for 20 minutes. 


Mix everything together, adding in fresh parsley, basil, arugula, or anything else you may want to use.  Shredded chicken is also really good to add.
