Smoothie Even a 12-Year-Old Could Love

I've never been able to get my 12-year-old daughter interested in smoothies. She never likes the ones I make. BUT, she loved this one, so I thought I'd share:

Pina Colada Smoothie
Adapted from Mollie Katzen's Sunlight Cafe, Hyperion, 2002

Combine 20 ounces fresh pineapple, 3/4 cup coconut milk, 3/4 cup vanilla yogurt, and 1-2 Tbs. whey protein powder in a blender and puree to the desired consistency.

Katzen's recipe calls for 20 ounces crushed pineapple packed in juice, but I prefer the fresh pineapple.

For a thicker, frothier shake, Katzen recommends substituting 8 coconut milk ice cubes for the 3/4 cup coconut milk. She suggests freezing the coconut milk in ice cube trays, then packing the cubes into zip-style bags for later use.  I haven't tried this option yet because it's winter and I don't want my smoothie too cold. But I think it will be a great summertime option.

My kids loves Sesame Milk with Honey
A lot of vitamins and tasty!
5 tbsp White Sesame Seeds
2 cups Water
1 tbsp Honey
tsp (optional) Vanilla
