Love your liver salad

This is an awesome salad for liver or just all around body cleansing! great for dieting and detoxing. Also a good way to get down those bitter greens!

Ingredients:
12-13c arugula
1/2 bunch parsley, chopped
1 stock green onion, sliced
1 large fennel bulb, sliced thin
1 med green apple, sliced thin (skin left on)

Dressing ingredients:
1 green apple, peeled
1 stock green onion, chopped
1/2 bunch parsley, chopped
6 Tbl olive oil
2 Tbl apple cider vinegar
1/4c water

Directions:
1. Mix salad ingredients together in a LARGE bowl and set aside.
2. In a blender, mix green apple, green onion, parsley, and one Tbl olive oil.
3. In a small bowl, whisk remaining olive oil and apple cider until emulsified.
4. Add everything in the blender to the small bowl (that has the olive oil/apple cider vinegar mixture) and stir well.
5. Toss the salad with the dressing and enjoy!
