RAW CHOCOLATE MOUSE

SERVES - 2

INGREDIENTS:

˝ cup medjool dates pitted & soaked for 5 hrs
1 large avocado peeled & pitted
1 Tbsp honey, raw & unpasteurized
1 ˝ Tbsp carob powder
2 tsp raw cocoa nibs
Pinch of herbamare salt
2 mint leaves washed and dried

DIRECTIONS:

Add dates and 1 to 2 Tbsp pure water and blend.

Add avocado, honey, carob powder, cocoa nibs, salt and little pure water and blend to a thick, smooth, creamy consistency.

Transfer to a bowl, cover and refrigerate in freezer for 15 mins.

Transfer two equal portions to separate bowls, garnish each with a mint leaf and serve.

I adapted this recipe from ‘Raw Food Made Easy For 1 or 2 People’ by Jennifer Cornbleet. I made the mouse for a friend whose diet consists mainly of raw foods and she could not believe how good it tasted.
