GIFT IN A JAR: DIY GLUTEN-FREE PANCAKE MIX
This anti-inflammatory, multigrain recipe is simple enough and delicious enough to gift to all of your friends and family this holiday season.
Gluten-Free Pancake Mix
Makes about 6 cups of mix, enough for two 3-cup gift jars
Total Prep Time: 15 min
Ingredients
3 cups sorghum flour
2 cups brown rice flour
2/3 cup potato starch flour
1/3 cup tapioca starch flour
6 Tbs ground chia seed
1 Tbs + 1 ½ tsp baking powder
2 ¼ tsp baking soda
1 ¼ tsp fine sea salt
Directions
In a large mixing bowl, gently whisk all ingredients to combine thoroughly.
If desired, add a total of 1 tablespoon of your favorite spices for a special variation on classic pancakes.
Divide mix evenly between jars. Decorate and add a label with instructions that say:

Whisk together
- 1 cup pancake mix
- 1 Tbs melted butter or coconut oil
- 1 Tbs honey or maple syrup
- 1 cup buttermilk or vegan buttermilk replacement*
Let batter rest for 10 minutes before cooking. Makes six 5-inch diameter pancakes. Enjoy!
