We will be sharing this delightful, high-protein dessert at the Bauman College Open House events this June. The recipe uses a natural sweetener and a variety of nutritious nuts and seeds. The cinnamon and orange are reminiscent of the holiday season. Try substituting other nuts and seeds or adding spices for tasty variations and bring it to share at the next summer picnic!
Nut Brittle Clusters

Ingredients
- 2 Tbs maple syrup
- 1/2 cup sunflower seeds
- 1/4 cup cashews, coarsely chopped
- 1/4 cup almonds, coarsely chopped
- 2 Tbs sesame seeds
- 2 Tbs flax seeds
- 1/2 tsp cinnamon, or more to taste
- 1 pinch salt
- 1 tsp orange, zested
- coconut oil, for greasing baking cups
Instructions
- Preheat oven to 350°F.
- Put half the maple syrup in a bowl.
- Add sunflower seeds. Mix until well coated.
- Add remaining nuts and seeds, cinnamon, salt, and orange zest. Fold and mix well.
- Add remainder of maple syrup and coat thoroughly.
- Grease bottom of mini-baking cups with coconut oil. Fill each cup with 1 heaping Tablespoon of brittle and bake 20 to 30 minutes.
- Check at 15 minutes and if the nuts are golden brown and clusters hold together – remove from the oven.
