Time to change up the coleslaw for tomorrow’ s BBQ. Celebrate the Fourth with some nutrient dense veggies!
Cabbage is a densely nutritive vegetable, packed with antioxidants and other cancer-preventative compounds.
Ingredients
¾ lb purple cabbage, cored and finely shredded
¾ lb green cabbage, cored and finely shredded
1 large carrot, grated
½ small red onion, very thinly sliced
1 cup parsley, roughly chopped
⅓ cup loosely packed oregano leaves, roughly
chopped
¼ cup + 2 Tbs olive oil, divided
1 medium shallot, thinly sliced
1 Tbs Dijon mustard
1 Tbs honey
½ cup apple cider vinegar
2 tsp smoked paprika
½ tsp sea salt
½ tsp freshly ground black pepper
Procedure
1 Combine the cabbage, carrot, onion, and herbs in a large bowl. Sprinkle with sea salt and set aside.
2 Heat a small pan over medium heat. Add 2 Tbs olive oil and sauté shallots until softened, about 2 minutes. Add mustard, honey, vinegar, and paprika and stir to combine. Stir in additional olive oil, salt, and pepper. Taste and adjust.
3 Pour warm dressing over vegetables and mix well.
