Before “farm-to-table” was a buzzword and before holistic nutrition was a recognized career, Dr. Ed Bauman was living it. His journey didn’t start in a classroom or a clinic, but on a 160-acre organic farm in Conway, Massachusetts, in 1970.

“On our farm, I learned how to grow, harvest, preserve, and ferment organic fruits and veggies,” Dr. Bauman recalls. “I learned how to bake whole grain bread on a wood stove.”

By 1973, he and his friends opened Home Comfort Restaurant—one of the first true farm-to-table establishments in the US—where he prepared every meal from scratch. This early immersion in the rhythm of the seasons and the power of scratch-made food laid the foundation for what would eventually become Bauman College.

The Architect of Holistic Nutrition

Dr. Bauman’s path took him from the soil of Massachusetts to Naturopathic school in New Mexico, and eventually to California. In 1976, he started the Berkeley Holistic Health Center, one of the first integrative clinics in the country.

His academic pursuits—including a Master’s in Education, a Master’s of Science in Nutrition, and a Ph.D. in Health Promotion—fueled his desire to create a formal path for others to follow. In 1984, he wrote the first version of the Nutrition Consultant Training program, which became the first of its kind licensed for professional certification in California.

“The Bauman College nutrition consultant and holistic chef training represents the love and diligence I and many others put in on a daily basis for the past 35 years,” says Dr. Bauman. Central to this is his Eating for Health model—a sustainable, holistic alternative to the rigid, often reductionist dietary trends seen in the industry today.
